Hitta rätt kantin till din restaurang.
Det är en hel djungel med olika mått på kantiner. Vi ska försöka reda ut vilken kantin du ska använda på din restaurang beroende på vad du ska använda den till. Först ska vi förklara lite generella fakta.
GN = Gastronorm
En norm är en standard. Alltså att alla GN kantiner följer ett visst mått. Finns det en standard i branschen underlättar det för tillverkare av t.ex. restaurangugnar, kylskåp, buffévagnar, vattenbad etc... Om alla följer denna standard vet man att det passar.
Material?
Vad du ska använda kantinerna till avgör ofta vilket material du ska använda. Det finns rostfria, polykarbonat (plast), melamin och porslin.
Rostfria kantiner används oftast i ugnar och vattenbad. I princip överallt där det är varmt. Rostfritt stål tål väldigt mycket. Värme, kyla och diskmaskin samt även mer vårdslös hantering.
Polykarbonat - plastkantiner används mer där man har kalla varor. Tack vare att dessa finns i svart plast kan sallad och annan färgglad mat se väldigt dekorativ ut i en salladsbar eller liknande. Polykarbonat är billigare än rostfritt. Nackdelen med dessa plastkantiner är att de inte tål varmhållning. Att diska i diskmaskin där det endast är varmt i någon minut är inga problem men de ska inte ligga i vattenbad en längre tid. Då blir plasten skör och spricker.
Melamin och porslin används främst vid servering där man vill visa upp maten på ett dekorativt sätt. Porslin är känsligt mot stötar men tål kyla och värme utan bekymmer. Melamin är mer känslig mot värme precis som polykarbonat. Melaminkantiner är tillverkad av plast men får en "porslin-look" vilket kan göra vilken buffé som helst väldigt aptitlig. Till exempel frukostbuffé, julbord och liknande.

Man utgår alltid från en "ett-etta" när man ska välja kantiner. Rational kombiugnar är anpassade för en 1/1 och detsamma gäller de flesta vattenbad och buffévagnar. Kylskåp kan vara anpassade för GN1/1 också men i de flesta fall kan man få in 2 st GN1/1 på ett hyllplan. Då kallar man det för GN2/1 (2st GN1/1).

Nej, det finns mer att tänka på. Det blir mycket mått hit och dit och nu ska vi fördjupa oss i ett mått till som är gemensamt för alla kantiner. Nämligen djupet/höjden.
Djup / Höjd:
Det finns flera olika höjder att få på kantinerna och samma sak här så är det helt vad du ska använda kantinen till. Ska du förvara större mängder behöver du en djup kantin men ska du bara förvara uppskurna köttbitar kanske du klarar dig med en lägre höjd på kantinen.
Det finns:
- 10mm (bricka)
- 20mm (bricka)
- 40mm
- 65mm (mest vanlig GN1/1 för restauranger)
- 100mm
- 150mm
- 200mm
10mm och 20mm kallas oftast för rostfria brickor och är vanligast i storlekarna GN1/1 och GN1/2.
40mm är mer standard i Tyskland och övriga Europa. Många restaurangmaskiner är anpassade för detta måttet vilket gör att gejderavståndet i många ugnar är smalare.
65mm är en vanlig höjd i Sverige och Rational i sverige erbjuder alla sina ugnar med ett gejderavstånd anpassad för denna storleken. Så i Tyskland får man en rationalugn för 6 st 40mm kantiner och i Sverige får man bara plats 5 st 65mm kantiner.
100mm kantiner rymmer uppenbart mer och är populärt att använda i buffévagnar för servering av dagens eller i ugnar för tillagning av exempelvis potatisgratäng.
150mm är det djup som är vanligast i kylrännor, vattenbad och i buffévagnar.
200mm kantiner är mindre vanligt förekommande men kan användas vid kokning av potatis i en rationalugn eller i vissa vattenbad som är anpassade för detta djupet på kantinerna.
